For us a meal starts with rice, meat and potatoes and then the rest follows. So, for us easy rice recipes are a very important part of our recipe collections. Using low-sodium chicken broth will lower both the calorie and fat content of the meal. The ingredient that really enhances this chicken rice recipe is Saffron. Saffron has a unique flavor and a radiant color that goes well with many dishes, especially rice dishes. Saffron has a sharp, pungent quality that serves to enhance taste and spotlight the color of any dish you may use it in. Only a small amount will be needed to gain the desired taste.
The first one is a very tasty and easy one suitable for the birds. You can serve it with chicken, duck and turkey. Do not substitute oil for the butter; it will not taste as good. In South African cooking we use a lot of butter and you cannot use oil in its place, well you can, but it will not be as tasty.
Place rice in heavy, medium-size saucepan with tight-fitting lid. Add 2 cups broth (or substitute with water), olive oil and 1 bay leaf, place over high heat and bring to boil.
Stir once and cover, then reduce heat to low and simmer for 45 minutes. While rice is cooking, drain beans and set aside. Spray medium saucepan with nonstick cooking spray and place over medium heat.
Another easy recipe that you may want to make if you have to feed a group is hot and spicy chili. Chili is not only easy to make but it is also an economical dish when you are trying to feed a lot of mouths. Brown the beef up and add plenty of pepper and onions and do not forget the beans. Add your own blend of spices and spice it up to your taste. If you will be feeding a lot of kids, keep it pretty mild. However, many adults like it a lot spicier. You may want to make two pots of chili - a mild version and a kickin' hot version as well.
The recipe is very easy to prepare and it only takes around 25 minutes. The dish is quite delicious and even little kids will love it. This rice recipe can already provide you with a balanced meal complete with protein, carbohydrates, fiber, B vitamins, and calcium. The chicken is an excellent source of B12 and protein; the veggies contain minerals, antioxidants, and vitamins. You can't possibly ignore these healthy benefits and of course the rice nutrition.
Add uncooked rice to the pot along with some vegetable broth and water. Bring to a boil, and then cover, reduce heat to a simmer, and cook until the rice has absorbed all the liquid. In the meantime, cut the tops off of some bell peppers and set aside. Clean out the inside of the peppers and place the empty peppers in small baking dish. Once the rice has fully absorbed the liquid, stir in some mozzarella cheese, fresh basil and season with salt and pepper. Spoon the mixture into the peppers and replace the tops. Bake until the peppers are hot all the way through. If the peppers start to dry out, add a little water or vegetable broth to the bottom of the baking pan while the peppers are cooking.
